Banana Carrot Applesauce Muffins

Ingredients to make Banana Carrot Applesauce Muffins

  • 1 cup whole wheat flour
  • 3/4 cup plain flour
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp cinnamon powder
  • 1/4 tsp salt
  • 1 cup shredded carrots
  • 2 tbsp raisins
  • 1 ripe banana mashed
  • 3/4 cup unsweetened applesauce
  • 4 tbsp melted butter
  • 1 tbsp flax seed powder
  • 3 tbsp marshmallow creme
  • 1 tbsp butter
  • 1-2 tbsp sugar
  • 1/4 tsp pumpkin spice (optional)
  • 1/4 tsp vanilla extract/imitation

How to make Banana Carrot Applesauce Muffins

  1. Preheat oven to 375 Deg F (190-200 Deg C). Soak flax seed powder in 3 tbsp water for 5 minutes.
  2. Combine all dry ingredients (wheat flour, flour, baking powder, baking soda, cinnamon powder, salt, carrots, and raisins) together. Whisk all wet ingredients (banana, applesauce, butter, and flax seed powder) together.
  3. Mix wet ingredients with dry and stir until mixed. Over mixing will make cake/muffins hard and dense.
  4. Spoon batter in muffin moulds or greased and dusted cake pan. Bake for 30 minutes or until toothpick inserted in middle of muffins comes out clean.
  5. Combine marshmallow creme with butter and sugar and microwave for 30 seconds. Stir in remaining ingredients till smooth. Apply over the muffins and sprinkle with colored sugar crystals.

My Tip:

Flax seed powder is used in place of egg. You can replace it with 1 egg.
