Jalebi

Ingredients to make Jalebi

  • Maida 1 1/2 cups
  • Water 1 1/2 cups
  • Orange food colour 4-5 drops or kesar strands 2 to 4
  • Yogurt 2 Tbsp
  • Ghee or oil for frying
  • Sugar 100 gms
  • Water 1 cup
  • Lemon wedges

How to make Jalebi

  1. Mix maida and water to get a flowing consistency. Mix very well with hand to incorporate air in the batter. If aluminium vessel is available that will be best.
  2. Rest aside for 24 hours.
  3. After 1 day of fermentation add 2 tbsp maida , orange food colour and mix to thicken the batter a bit.
  4. Boil sugar and water to make a one string consistency syrup.
  5. Add lemon wedges to make scum come on top which can be removed with a spoon.
  6. Fill batter in plastic ketchup bottle.
  7. Take ghee in frying pan or any flat bottom pan and fry jalebis till golden.
  8. Immediately soak in sugar syrup for 2 to 3 minutes.
  9. Serve hot with rabri.

My Tip:

Use aluminium vessel for mixing that gives better results. Ferment for 24 hours if less time then add 4 tbsp yogurt and rest for a minimum of 7 to 8 hours.
