Ingredients Serving: 4

  1. Basmati rice 3 cups washed , pre-soaked for 10 minutes
  2. Whole coconut medium size cut into small pieces .
  3. Water to grind 3/4 cup
  4. Onion 1 medium thinly sliced
  5. Green chillies 5
  6. Ginger garlic paste 3/4 teaspoon
  7. Garlic finely chopped 1 tablespoon
  8. Ghee 3 tablespoons
  9. Oil 2 tablespoons
  10. Salt 2 teaspoons or as preferred
  11. Bay leaf 3
  12. Cinnamon stick 1 large
  13. Star anise 3
  14. Cloves 5
  15. Green cardamom 4
  16. Cilantros chopped 3 tablespoons

Instructions

  1. In a pot , heat ghee and oil .
  2. Add the whole garam masala ingredients .
  3. Sauté Green chillies .
  4. Sauté finely chopped garlic .
  5. Add ginger garlic paste . Sauté till raw smell leaves.
  6. Add onions and sauté till pink.
  7. Add the drained basmati rice and slow roast rice in low flame . Do toss gently when required .
  8. Meantime , grind the coconut pieces by adding required water to a thick smooth paste .
  9. Extract thick coconut milk .
  10. Then add little water and blend the presses coconut again to extract thin coconut milk .
  11. Coming to the rice , the rice had been gently roasted . Rice shouldn’t turn colour while roasting .
  12. Pour 3 cups coconut milk . First use thick coconut milk . In case required , use thin milk for additional .
  13. Add salt .
  14. Give a gentle stir .
  15. Sprinkle chopped cilantros reserving a few for final garnish .
  16. Cover the pot tightly and cook for 10 minutes under low to medium heat .
  17. After 10 minutes , when aroma starts filling , uncover the pot .
  18. Fluff the pulao with a fork immediately .
  19. Garnish with cilantros .
  20. Serve hot with your favourite side dishes .
