Mango Kesari

Ingredients to make Mango Kesari

  • mango - 1 large ripe peeled
  • Suji - 1/2 cup (60 ml)
  • sugar - 1/2 cup (60 ml)
  • water - 1 cup
  • ghee - 1/2 cup (60 ml)
  • cashew nuts 2-3 tbsp
  • raisins - 2 tbsp

How to make Mango Kesari

  1. Blend the mango and the sugar into a smooth puree.
  2. Heat the ghee in a pan, add the cashew nuts and fry till golden. Add raisins and stir for a few seconds and take it out.
  3. Add in suji and roast it on a low flame for 3-4 minutes till you smell its aroma.
  4. Add in water and mix well. Continue to cook till it thickens, stirring continuously. Add in the mango puree and mix well.
  5. Cook for around 5 minutes making sure it does not dry up completely. Take off the flame, let it cool down. Scoop it to desired shapes and serve.

My Tip:

It can be stored for 2-3 days, provided it is refrigerated
