ABOUT Phalsa Berry Sharbat RECIPE

Beat the summer heat with this gorgeous Phalsa (Grewia siatica) sharbat. This astringent & cooling thirst quenching is unique in taste and is full of antioxidants, minerals and other nutrients.

Ingredients Serving: 4

  1. Phalsa Berry - 250 gms
  2. Rock Salt or Black Salt - 1 teaspoon
  3. Sugar - 50 gms (If required)
  4. Water - 500 ml

Instructions

  1. Wash and clean the berries and place them in a large bowl. (These berries are very delicate so be gentle.)
  2. Sprinkle salt and sugar to taste and mix it properly in the berries.
  3. Let the berries macerate and release the juices. Do not add water.
  4. Leave the mix for 15 minutes and then rub it with fingers or mash it to release the juices.
  5. Take another pot and place the strainer over it. Now add water to the berry mix and stir and pass it through the strainer while rubbing the pulp through strainer surface with fingers to release optimal juice.
  6. Dilute with more chilled water or ice cubes. Add Pink salt or sugar to taste and serve chilled in a tall glass.
