The delicious spicy coconut flavoured curry

Ingredients Serving: 3

  1. 250-300g boneless chicken cut into bite sized pieces
  2. 2-3 tablespoons coconut oil/ olive oil
  3. 1 small onion finely chopped
  4. 2-3 garlic cloves minced
  5. 1 inch ginger chopped
  6. 1 cup thick coconut milk
  7. 1/2 cup shredded carrots
  8. 1/4 cup chopped spinach leaves
  9. 1/2 teaspoon Pepper
  10. 1/2 teaspoon coriander powder
  11. Salt to taste
  12. 1 teaspoon brown sugar optional
  13. 2 tbsp chopped Cilantro
  14. 1/2 teaspoon lemon juice
  15. Curry powder- To grind
  16. 4.5 teaspoon roasted coriander seeds
  17. 2 teaspoon turmeric
  18. 1/2 teaspoon red chilli flakes
  19. 1/2 teaspoon Peppercorns
  20. 1/2 teaspoon cardamom seeds
  21. 1/4 teaspoon ground ginger
  22. 1/4 teaspoon roasted cloves
  23. 1.5 teaspoon roasted cumin seeds

Instructions

  1. Blend all ingredients mentioned under curry powder section to fine powder. Store in airtight container
  2. Heat oil in a pan add ginger, garlic and onions. Saute until onions are tender
  3. Add chicken and stir fry for 5 minutes
  4. Lower the heat, add coconut milk, carrots, salt , 2 tbsp curry powder and pepper. Mix well. Any excess curry powder to be used for future use
  5. Cover and cook stirring occasionally until gravy starts thickening
  6. Add spinach leaves. Cook until it starts wilting
  7. Add lemon juice and sugar. Mix well. Check for seasoning
  8. Sprinkle with cilantro and serve
