Lamb kababs with feta cheese and herbs

Ingredients to make Lamb kababs with feta cheese and herbs

  • 6 cloves Garlic
  • 1 inch piece Ginger roughly chopped
  • 1 medium Onion roughly chopped
  • 8 sun dried Tomato halves (not oil packed)
  • 1 roasted red Pepper patted dry
  • 1/4 cup tightly packed (washed and dried well) fresh coriander leaves
  • 1/4 cup tightly packed (washed and dried well) Mnt leaves
  • 1/4 cup tightly packed (washed and dried well) Parsley
  • 50 gms crumbled Feta cheese as required
  • 1 Egg
  • 2 slices Bread
  • 2 tbsp Turkish Spice Blend
  • Salt to taste
  • 1 lb (450g) lean ground Lamb
  • 1 Lemon halved

How to make Lamb kababs with feta cheese and herbs

  1. Combine garlic, ginger, onion, sun dried tomatoes, roasted pepper and herbs in food processor. Process until well minced.
  2. Add feta, egg, bread, spices and salt. Process to mix again.
  3. Add lamb and mince well until well blended. Transfer to a bowl and refrigerate, covered for 15 min or up to overnight. When ready to grill, preheat outdoor barbecue to medium heat.
  4. With dampened hands, divide lamb mixture into 8 equal portions and roll into balls. Press a skewer into each ball and gently stretch it into a 4 - 5 inch long sausage shape, moulding it with your hands and pressing gently to hold the meat in place. Grill skewers for about 12-15 min, turning occasionally until cooked through and lightly browned.
  5. Transfer to a platter and serve with a squeeze of lemon juice.
My Tip: Use homemade spice blend, it tastes so much better!
