Jaggery Rice

Ingredients to make Jaggery Rice

  • Basmati rice 2 bowls
  • jaggery - 150-200 gm (depend upon your sweetness requirement)
  • raisins - 1/4 cups
  • almonds - 8-10
  • Dry coconut - 2 inches
  • cardamom - 4
  • cardamom powder - 1/2 tbsp

How to make Jaggery Rice

  1. Dip the rice in water in a big pan for 15 minutes.
  2. Chop the dry coconut and almonds and keep aside.
  3. Take a pan add 4 bowls water in it and then add jaggery and let it boil till the jaggery completely dissolves in water.
  4. Keep it aside.
  5. In a pressure cooker, add 1 tbsp olive oil and let it be heated.
  6. Add cardamom and then add dipped rice and then slowly the jaggery water in it.
  7. Add chopped coconut, almonds and raisins in it.
  8. Add cardamom powder in it and let it boil
  9. Now after one bowl, cover it with lid and let whistle for 2 times
  10. Now off the flame and let the steam come out automatically slowly.
  11. After steam cleared out, open the lid and check it. Water absorption depends upon the water quality.
  12. When fully cooked, serve in a bowl and garnish it with coconut and almonds.
