Mango Jackfruit Seed Bhurji

Ingredients to make Mango Jackfruit Seed Bhurji

  • Raw mango finely grated - 1 cup
  • Jack fruit seeds - 2cups
  • Finely chopped onions - 1 cup
  • Chopped garlic - 4 nos
  • Chopped spring onions - 3 tbsps
  • Finely chopped ginger - 1 inch piece
  • red chilli powder - 1 tsp
  • turmeric powder - 1/2 tsp
  • Channa masala powder - 1 tsp
  • salt - to taste
  • Ingredients for Seasoning:
  • oil - 2 tbsp
  • fennel seeds - 1 tsp
  • curry leaves - 1 sprig
  • For garnishing
  • Spring onions - 1 tbsp

How to make Mango Jackfruit Seed Bhurji

  1. Steam cook the jackfruit seed for one whistle in the presuure cooker.
  2. Grate finely the mangos and squeeze the liquid from the grated mangoes and keep aside.
  3. Blend coarsely the boiled jackfruit seeds and keep aside.
  4. Heat oil in a pan and add fennel seeds, when it splutters add curry leaves and broken red chillies.
  5. Add chopped onions, spring onions, garlic and ginger and sauté till onions becomes translucent.
  6. Add grated and squeezed mangoes and cook till the moisture is absorbed from the mangoes.
  7. Add coarsely blended jackfruit seeds , required salt, red chilli powder, channa masala powder and mix till everything incorporates well and all the moisture is absorbed and remove from flame.
  8. Garnish it with spring onions.
  9. Mango jackfruit seed bhurji is ready to serve.
  10. Serve hot.
