Mango Phirni

Ingredients to make Mango Phirni

  • Ripe mangoes - 1 peeled and small cubed
  • Basmati Rice - 120 ml cup
  • Full Cream Milk - 1 litre
  • Sugar - 6-7 tbsp
  • Cashewnuts - blanched and sliced 6-7
  • Almonds - blanched and sliced 6-8

How to make Mango Phirni

  1. Soak rice in water for half an hour. Drain and grind to a coarse paste.
  2. Dilute rice paste with half a cup of water. 
  3. Heat milk and bring it to a boil.
  4. Reduce heat and gradually stir in the rice paste and simmer for 10-15 minutes, stirring continuously.
  5. Check whether rice is cooked fully if not cook untill it is cooked properly.
  6. Then add sugar and continue to simmer till sugar dissolves and is incorporated well.
  7. Remove from heat, cool to room temperature and stir in mango cubes keeping a few aside for garnishing.
  8. Garnish with sliced cashewnuts, almonds and mango cubes and serve chilled.
