Bharva Aloo Baingan

Ingredients to make Bharva Aloo Baingan

  • 4-5 Small brinjals
  • 4-5 small parboiled potatoes
  • 1 Onion
  • 1 tomato
  • garlic
  • Ginger
  • Green chilli
  • Tomato puree
  • Salt to taste
  • 1/2 tsp red chilli powder
  • 1 tsp Coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin seeds
  • Garam Masala
  • Pinch of asafeotida
  • Crushed groundnut

How to make Bharva Aloo Baingan

  1. Take a bowl mix salt, coriander powder, red chilli powder, turmeric powder, amchoor powder
  2. Slit brinjals and potatoes criss cross but intact from bottom
  3. Put dry masala mixture into these potatoes and brinjals. keep them aside
  4. Grind onion,tomato, ginger garlic green chillies into a fine paste.
  5. Take a wok. Put little oil add pinch of asafeotida, 1/2 tsp cumin seeds. Now add grinded paste. Saute for sometime. Add crushed ground nut. Saute for some time
  6. Add potatoes and brinjals. Cover it with lid.
  7. Let it cook for some time
  8. Sprinkle coriander leaves for garnishing
