ABOUT Medu Vada RECIPE

Savoury Dumplings made from Urad dal batter, a South Indian recipe loved by all.

Ingredients Serving: 4

  1. Urad Dal 1 cup ( washed and soaked for 3 hours)
  2. Methi/ Fenugreek seeds 1/2 tsp ( soaked with the urad dal)
  3. Salt 1 tsp
  4. Ginger 1/2” chopped
  5. Green chillies 2 finely chopped
  6. Coarse black pepper powder 1/2 tsp
  7. Curry leaves 1 sprig finely chopped
  8. Oil for Deep frying

Instructions

  1. Make a fine paste of the soaked urad dal using as little water as possible. The batter needs to be thick. Now beat the batter with a whisk till it is fluffy and airy.
  2. Add salt , ginger, green chillies, black pepper powder and curry leaves to the batter. Mix well.
  3. Heat sufficient oil for deep frying. The oil should be hot.
  4. Shape the vada using wet hands and poke a hole in the centre of the vada. Slip the shaped vada into the hot oil and deep fry till golden brown.
