Chicken Roulade with Red Wine Sauce

Ingredients to make Chicken Roulade with Red Wine Sauce

  • 4 chicken breasts
  • 1/2 cup chopped mushrooms
  • 1 cup chopped spinach
  • Few strips of red bell pepper
  • 1 tspn garlic chopped
  • 1 cube of processed cheese
  • Salt and pepper
  • Chilli flakes and oregano
  • oil
  • 1/4 cup red wine
  • 1tspn balsamic vinegar
  • Honey
  • Mustard powder
  • 1 stock cube

How to make Chicken Roulade with Red Wine Sauce

  1. Take the chicken breast piece and cut from the middle horizontally. Then flatten it with a mallet.
  2. Sprinkle salt and pepper and keep aside.
  3. Heat some oil in a pan and saute the garlic and onions. Add the mushrooms and spinach and keep sauting on high heat. Once done remove and add salt and pepper. Add the grated cheese to it.
  4. Now take a cling film and place a flattened chicken on it. Put a spoonful of spinach mixture and few strips of bell peppers in the centre.
  5. Now roll the chicken breast carefully and wrap the cling film tightly around like we do for a toffee.
  6. Boil water in a large pan and once it starts boiling add the rolled chicken and let it boil for 10 mins. Then remove and keep aside.
  7. Now remove the cling film and slightly grill them on a griddle till they become nicely brown.
  8. To make the sauce mix the stock cube in half cup warm water. Pour it in a pan and add everything except the wine. Once it starts boiling add the red wine. Let the sauce thicken then remove and keep aside.
  9. To assemble cut the chicken pieces into thick roundels and serve it on a platter with some grilled vegetables and drizzle it with some wine sauce.
