ABOUT HANDVO RECIPE

The traditional Gujarati savoury cake preapared in a manner where you just cannot go wrong.This traditional recipe cook in a spcial cooker.this recipe made both village and city.This gujarati snack attractive,protin rich uses mixed flour and bottleguard.

Ingredients Serving: 6

  1. 2teacup rice soaked and drained
  2. 1/4cup urad dal soaked and drained
  3. 1teacup toovar dal soaked and drained
  4. 1/4cup moong dal soaked and drain
  5. 1/4cup gram dal soaked and drain
  6. 1/4cup wheat optional
  7. 1cup sour curds
  8. 10 to 12 green chillies paste
  9. 25mm (1") piece ginger paste
  10. 3/4cups grated bottle gourd (doothi,lauki)
  11. 9tbsp oil
  12. Juice of 1/2lemon
  13. 1tsp soda bi-carb
  14. 4 to 5 tsp suger
  15. 1tsp chilli powder
  16. 1/2tsp haldi powder
  17. Salt to taste
  18. For tempering:-2tbsp oil
  19. 2tsp musterd seeds
  20. 2tsp sesame seeds
  21. 2tsp ajwain
  22. 1/2tsp asafoetida (hing)
  23. 1tbsp coriander leaves

Instructions

  1. Combine the rice and dals and blend in a mixer till smooth.
  2. You can also wipe the rice and dala and wheat with a wet cloth, mix and grind dry coarsely like semolina. Transfer the mixture into bowl, add the sour curds and hot water and make into a thick mixture. Cover and leave to ferment for atleast 6 to 7 hours. Add the bottle gourd, oil, lemon juice, soda bi-carb,suger, chilli powder,haldi powder,green chilli-ginger paste and salt. Mix well.
  3. Heat 5tbsp oil in a vessel and add the mustard seeds.
  4. After 1 minute, add the sesame seeds, ajwain and hing.
  5. When brown in colour, spread this half mixture in banda cooker.
  6. Pour batter in a cooker and spread remaining tempering all over the batter.
  7. Cover the lid and cook for 30 minutes in a medium flame.
  8. You can also bake in hot oven at 450°F. for 30 to 35 minutes or till the crust is brown in colour.
  9. Cut into pieces and serve with pickle and butter milk.
  10. You can also serve handvo with sprinkle oil.
  11. You can eat as a dinner or a snake.
