Ingredients to make Shakshuka – Poached Eggs In Fiery Tomato Sauce

  • Olive Oil – 2 tablespoons
  • Red or White Onion – 1 large Peeled and thinly sliced or diced
  • Garlic – 3 cloves minced or finely chopped
  • Tomatoes – 8 large finely chopped ripe plum tomatoes or 1 can of whole plum tomatoes with juice
  • Tomato Paste – 4 tablespoon
  • Sweet bell peppers – Red and Yellow (I each – seeded / finely diced or sliced thin)
  • Jalapeno pepper/ cayenne pepper or green chili (optional & according to taste) - Seeded and diced
  • Salt – to taste (you can use kosher salt)
  • Ground cumin seeds – 1 teaspoon
  • Black peppercorn – freshly ground (to taste)
  • Eggs - 4
  • Paprika - 1/2 teaspoon
  • Fresh sweet corn (boiled) – 4 tablespoon
  • Sugar- 1 teaspoon
  • Fresh Basil/parsley (optional) – 1 teaspoon
  • Feta/Parmesan or any other cheese you like - As per your taste
  • Bay leaf – 1 ( I like the taste with tomatoes)
  • 1/4 to 1/2 cup water or more if needed
  • Fresh coriander greens - 4 tablespoons (finely chopped)
  • You can add sausages etc if you wish.

How to make Shakshuka – Poached Eggs In Fiery Tomato Sauce

  1. Warm olive oil in a large heavy skillet over medium heat. Add the bay leaf. Add onion and saute until translucent and soft. Add garlic and continue to saute till you get a nice fragrance.
  2. Add bell peppers and jalapenos. Cook them on low-medium heat till they are tender. (About five minutes)
  3. Season with all the spices mentioned. Cook and stir for about 5 minutes. Add corn/sausage/herbs whichever you are using. Stir them in gently. Pour in the tomato sauce, stir and add the water as required. The sauce should not be very thick. Simmer the sauce on medium heat till the veggies or meat softens. About 15-20 minutes.
  4. Once the sauce is ready make a depression in the sauce with a large spoon and crack one egg in each depression. Make sure to space them evenly over the sauce. Sprinkle some salt and pepper over the eggs and cover the skillet to cook till the eggs are cooked to your required doneness.
  5. Keep an eye on the dish so that the sauce does not reduce too much which will lead to burning. Garnish with fresh parsley/coriander and crumble the feta or any other cheese you are using to finish off the dish.
  6. You can bake it in oven too. For this preheat the oven to 180 degrees and bake for 10-20 min till the eggs are done and cheese melts nicely over them.
