ABOUT Bisnauti or Crispy Masala Puri RECIPE

Puri is most commonly served at breakfast in the Indian Sub Continent. It is also served at special or ceremonial functions as part of ceremonial rituals along with other vegetarian food. There are different varieties of Puri are made across the country. Today in Jai Ki Rasoi Se made age old traditional Puri recipe of my grandmother (Nani) which called "Bisnauti or Crispy Masala Puri" which served with Raita and Pickle.

Ingredients Serving: 10

  1. Wheat Flour (Gehoon Ka Atta) - 250 Grams
  2. Gram Flour (Besan) - 50 Grams
  3. Green Chilli Paste (Hari Mirch Ka Paste) - 1 Table Spoon
  4. Ginger Garlic Paste (Adrak Lasoon Paste) - 1 Table Spoon
  5. Red Chilli Powder (Lal Mirch Powder) - 1 Tea Spoon
  6. Turmeric Powder (Haldi Powder) - 1 Tea Spoon
  7. Coriander Powder (Dhaniya Powder) - 1 Table Spoon
  8. Cumin Powder (Jeera Powder) - 1 Tea Spoon
  9. Whole Spice Powder (Garam Masala Powder) - 1 Tea Spoon
  10. Finely Chopped Green Coriander (Barik Kata Hara Dhaniya) - 1 Bunch Finely Chopped
  11. Mint Leaves (Barik Kata Pudina) - 1 Bunch Finely
  12. Chopped Curry Leaves (Barik Kata Curry Patta) - 25 to 30
  13. Sesame Seeds (Til) - 1 Table Spoon
  14. Lemon Juice (Nimbu Ka Ras) - 1 Table Spoon
  15. Salt - According to Taste
  16. Oil - As per Requirement

Instructions

  1. In bowl add wheat & gram flour, green chilli & ginger garlic paste, red chilli, turmeric, coriander, cumin, whole spice powder, finely chopped green coriander, mint leaves and curry leaves. Finely 2 table spoon add oil and salt according to taste. Mix all ingredients
  2. Knead a tight dough by adding water as per requirement. Rest the dough for 20 minutes
  3. Divide the dough in equal portion. With the rolling pin make thin puri of 3 to 4 inches
  4. Heat oil in a kadai, once the oil is hot, add puri. Fry them till they turn golden brown
  5. Now the dish ready to be served with any Raita and Pickle
