ABOUT Leftover Rice Muthia RECIPE

Ingredients Serving: 4

  1. 2cup leftover rice
  2. 1/2cup grated lauki
  3. 1/2cup besan
  4. 1/4cup fine semolina (sooji)
  5. 1/2cup curds well beaten
  6. 1tsp green chilli-ginger paste
  7. 1/4tsp soda bicarb
  8. 1tsp turmeric powder
  9. 2tsp suger
  10. 2tsp chiili powder
  11. 2tbsp coriander leaves
  12. Salt to taste
  13. For tempering- 2tbsp oil
  14. 1/2tsp mustard seed
  15. 1tbsp sesame seeds
  16. 1/4tsp asafoetida
  17. 5-7 curry leaves
  18. 2green chilli silted
  19. For garnishing coriander leaves, chaat masala and lemon slice

Instructions

  1. Mix all the ingredients and mix well.
  2. Add a little water if need and knead into a soft dough.
  3. Shape into oblong muthias in a cylindrical shape.
  4. Steam in steamer till cooked or 10 to 15 minutes.
  5. Cut each roll into thick slices.
  6. Heat oil in a pan, add mustard seeds.When they pop add sesame seeds,curry leaves, green chill asafoetida.
  7. Add sliced muthias and mix well.
  8. Serve with tea and sprinkled with coriander leaves, coconut,chaat masala and lemon slice.
