Ingredients to make Gluten Free Healthy Blondies

  • 1 1/2cup chickpeas (boiled drained)
  • 1/2 cup of peanut butter
  • 1/3 cup of maple syrup
  • 1/4 cup of light brown sugar
  • 1/4 tablespoon of baking powder
  • 1/4 teaspoon of baking soda
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of cocoa powder
  • A pinch of salt
  • chocolate chip and almond flakes 1/4 CUP

How to make Gluten Free Healthy Blondies

  1. Preheat the oven at 180* C and line a baking dish with parchment paper and set aside. Drain and pat dry the boiled chickpeas.
  2. In the food processor add all the ingredients except cocoa powder, chocolate chips and almonds. Process until the batter is smooth.
  3. Now divide the batter into two mixing bowls. Add cocoa powder in one of the blondies batter and mix well.
  4. Spoon large blobs of each cake mixture into the prepared tin, alternatively.
  5. Use a tooth pick and make a swirling pattern throughout the blondies batter spread into the baking pan to gently achieve the marble effect.
  6. Bake for 20-25 minutes, it may look underdone, but do not over bake as that will dry out the dessert.
  7. Remove pan from oven and allow to sit on a wire rack for at least 30 minutes before removing and slicing.

My Tip:

I have not used any egg in this recipe that make these blondies vegan food, which is totally optional. However adding egg to the batter will make more cake like blondies.
