Ingredients to make Thai vegetable rice paper rolls

  • Vermicelli 1/2 cup
  • Lettuce leaves 5
  • Thinly sliced carrots 1/3cup
  • Thinly sliced red and yellow bell peppers 1/2 cup
  • Chopped onion 1
  • Crushed roasted peanuts 1/4 cup
  • vinegar 1 tsp
  • Light soya sauce 1 tsp
  • chilli flakes
  • Fresh coriander chopped
  • rice paper sheets 8 nos
  • salt according to taste

How to make Thai vegetable rice paper rolls

  1. For vermicelli: Boil vermicelli in water and drain the water once done. Pour cold water over it to prevent sticking. Heat 1 tsp oil in a pan and add chopped onion and saute . Then add chilli flakes, boiled vermicelli, a dash of soya sauce and vinegar along with salt and saute for a minute and keep it aside.

My Tip:

Any filling can be added to the rolls for e.g shredded chicken ,prawns etc.
