Ingredients Serving: 4

  1. Big size tomato....10
  2. Egg...3
  3. Onion...1
  4. Garlic cloves...5
  5. Ginger paste...1tspn
  6. Turmeric powder...2tspn
  7. Red chilli powder...2tspn
  8. Green chilli...3
  9. Kashmiri red chilli...5
  10. Coriander leaves for garnishing

Instructions

  1. Cut the top portion of tomato & scoop out the flesh of it first.
  2. Make a mixture of beaten eggs, salt,turmeric powder, red chilli powder & chopped coriander leaves
  3. Pour 3 to 4 tspn egg mixture inside the tomato cell.
  4. Cover it with the top portion of tomato & seal it with a toothpick.
  5. Heat 2 tspn oil, add cumin seeds & let it crackle.Add green chilli, chopped onion, garlic, & ginger paste.Saute it for few minutes.
  6. Add 10 tspn tomato_ red chilli paste.Mix it well & cook it till soft.
  7. Add stuffed tomatoes , salt & all spices.Cover it & cook it well.Check it after 5 to 7 minutes.If needed add some water.Cook it till the tomatoes soft.
  8. It's ready now.Serve it hot with parantha or any Indian bread.
