ABOUT Vaamu Chenegepindi Segu / Ajwain Ghatiya RECIPE

Ganthiya or Gathiya are deep fried Indian snacks made from chickpea flour and flavored with carom seeds. They are a popular tea time snack in Gujarat and North India. They are soft, slightly crunchy and melt in mouth like most other Indian snacks.

Ingredients Serving: 10

  1. 3 to 3.5 cups : Besan / Gram flour
  2. 1 cup : warm water
  3. 3/4 cup : Unflavored Oil (Vegetable or sunflower oil )
  4. 1/4 tsp : Soda bi carb
  5. Pinch of turmeric
  6. 1 tbsp : Carom seeds / Ajwain
  7. Salt to taste
  8. 1 tsp : Black pepper powder
  9. 1/8 tsp : Asoefetida / Hing
  10. Oil for Deep frying

Instructions

  1. In a mixing bowl add water and oil, then beat it with a whisk or hand blender until slight milky white.
  2. Next add in the soda and continue whisking until slightly frothy.
  3. Later stir in the salt, carom seeds, turmeric, pepper powder, hing, give it a good stir.
  4. Next incorporate the flour until it turns thick dough
  5. Now scoop and fill the chakli maker attached with a big holed disc.
  6. Meanwhile start heating up the oil for frying on medium high heat.
  7. Now press the gathiya into the hot oil in circular motions until the pan is 3/4th full.
  8. Fry this for couple of minutes until the bubbles disappear and later flip and fry on the other side as well..
  9. Now remove and drain this on a paper towel and continue filling and frying until all the dough is used.
  10. Once it cools down break into pieces and store in an airtight container and cherish.
  11. Crispy melt in mouth goodness is ready to munch on !!
