Ingredients to make Quinoa & Ricotta Cheese Pudding (Kheer)

  • 1/2 cup quinoa
  • 1/2 cup ricotta cheese
  • 6 cups milk
  • 1/2 cup sugar
  • 1 to 1 1/2 tsp cardamom powder
  • 1/4 tsp kewra water
  • 3 tbsp Crushed/chopped mixed nuts (almonds, pistachio, walnuts, raisins)
  • Few strands of saffron
  • 2 tbsp ghee/clarified butter

How to make Quinoa & Ricotta Cheese Pudding (Kheer)

  1. Wash quinoa 2-3 times in water and soak it for 30 minutes. Drain.
  2. Boil quinoa in 1 cup of water for 15 minutes.
  3. Boil milk on low heat (skim off the layer of malai). Keep stirring at intervals to prevent sticking to the bottom of the vessel.
  4. Add milk and sugar and mix well. Keep simmering the kheer till it starts thickening.
  5. Finally, add the ricotta cheese, saffron, cardamom powder, and kewra. Simmer for some more time till all flavors are infused.
  6. Remove to serving bowls and garnish with chopped nuts.

My Tip:

If preferred, chill the kheer. If kheer thickens too much after cooling down, dilute with milk. Substitute ricotta cheese with crumbled paneer if unavailable.
