ABOUT Dal Makhani (Maa ki Dal) RECIPE

Dal Makhni is creamed lentils delicately tempered and seasoned with exotic spices, it is a very popular Punjabi (North India) lentil dish and a world famous delicacy which can be enjoyed with naan, paratha or rice too.

Ingredients Serving: 5

  1. 3/4 cup Whole Urad Dal (Black gram)
  2. 1/4 cup Rajma (Red Kidney beans)
  3. 1 tbsp Butter
  4. 1 tbsp Oil
  5. 1/2 cup fresh cream
  6. 1 tbsp Yoghurt
  7. 1 green chili chopped
  8. 1 Pinch asafoetida
  9. 1/2 tsp Cumin seeds
  10. 1 tsp Ginger-Garlic paste
  11. 1 medium onion chopped
  12. 2 big Tomato pureed
  13. 1 tsp Red chili powder
  14. 1 tsp Turmeric powder
  15. 1 tbsp Coriander powder
  16. 1 tsp Garam masala powder
  17. Pinch of Kasuri methi
  18. Salt to taste

Instructions

  1. Soak Urad dal and rajma overnight in 3 to 4 cups of water.
  2. Pressure cook the soaked rajma and dal with a pinch of turmeric and salt till they get soft, when cooked with the help of a ladle press and mash them a little then keep aside.
  3. Heat oil and butter in a thick bottomed pan add cumin seeds and let them splutter then asafetida, add chopped green chili and onions, when onions get translucent add ginger-garlic paste then let it cook till onions get golden brown.
  4. Add tomato puree, mix well and then add all the spices, salt to it.
  5. Mix and let it cook till the oil separates, add boiled dal and rajma. Adjust consistency with hot water if needed and let it cook on sim heat.
  6. Add fresh cream, yoghurt, garam masala, kasuri methi and cook for another 5 minutes on simmer.
  7. Garnish with fresh coriander leaves an fresh cream on top.

Hi. wanted to ask , wen we soak the urad dal overnight then the chilka of the dal comes out? is it ok
