Ingredients Serving: 6

  1. 200 gm shell pasta
  2. 200 gm ricotta cheese or cottage cheese
  3. 1/4 cup finely chopped onion
  4. 1/4 cup finely chopped tomato
  5. 1/4 cup finely chopped spanich
  6. 1 tbsp finely chopped basil
  7. Salt and pepper to taste
  8. For the sauce :
  9. 1 tbsp butter
  10. 1 tbsp flour
  11. 1/2 cup milk
  12. 1/2 cup cream
  13. 1/4 cup Parmesan cheese
  14. Salt, pepper and nutmeg to taste

Instructions

  1. Boil the pasta as per the instructions given on the pack.
  2. In a medium bowl, mix together ricotta or cottage cheese, onion, tomato, spinach, basil, salt and pepper. Stuff pasta with this mixture and set aside.
  3. For the sauce: Melt the butter in a thick saucepan, add the flour and cook for 2 minutes. Remove from heat and add the milk and stir well.
  4. Return the pan again onto the gas and add the cream, Parmesan, salt, pepper and nutmeg. Bring to a boil, lower heat. Place the stuffed pasta on a greased baking dish and pour the sauce over. Garnish with grated cheese and bake at 180*c for 10-12 minutes.
