This soup is great recipe for weight loss and maintaining a healthy digestive system. This delicious lauki and tomato soup recipe is very simple to make and is a great way of including lauki in meals, either as a side or the whole meal itself. Especially during winters, a soup dinner night is very comforting.

Ingredients Serving: 4

  1. 1 cup peeled and chopped lauki
  2. 1 small onion chopped
  3. 2 small tomatoes
  4. 3-4 flakes of garlic
  5. 1/2 teaspoon pasta pizza seasoning
  6. Pinch of dried thyme
  7. pinch of dried basil
  8. Salt to taste
  9. 1 tablespoon oil
  10. 1 teaspoon butter

Instructions

  1. Take a pressure cooker put 1 tbsp oil in it
  2. Add chopped garlic and onions in it.
  3. Cook for about 5 minutes until onion becomes soft.
  4. Now add chopped Loki in it.
  5. Peel the tomatoes. we need to take out the skin from that and then chop it and put it in the cooker
  6. Close the cooker and give it one whistle and then keep for 2 minutes on sim.
  7. Open the cooker and blend the vegetable mix with a blender
  8. Take another pan add 1 teaspoon of butter in it
  9. Add the pizza pasta seasoning, thyme and basil in the butter.
  10. Now pour the blended Lauki and tomato mix in it.
  11. Add salt to it and Give it one boil.
  12. Your delicious lucky tomato soup is ready..
