Ingredients to make Raspberry Centre Sables

  • For sable :
  • flour 1 cup
  • Soft unsalted butter 1/2 cup
  • Castor sugar 1/4 cup
  • For raspberry jam:
  • Raspberries 500gms
  • Castor sugar 200gms
  • lemon juice 125gms
  • Pectin 2.5 gms
  • water 50gms

How to make Raspberry Centre Sables

  1. For sable: Make a dough out of the ingredients mentioned above. And before working on it, chill it for about 2-3 hours. Cut out with cookie cutter. Bake at 180c for 14-15 mins.
  2. For raspberry marmalade: Add your sugar to a saucepan and caramalise it. Now add your raspberries and water. Cook till the mixture becomes one. Remove from heat and add pectin and lemon juice. When cooled down pour in a piping back.
  3. And fill up your cookies.

My Tip:

Caramalising sugar for the marmalade would give it a thick structure and consistency.
