Ingredients to make Chicken cooked in Clarified Butter

  • For Marination:
  • 1 kg chicken
  • 5 medium sized onions
  • 2 medium sized tomatoes
  • 2 tbsp curd
  • , 4 green chilies, 1 tbsp each ginger garlic paste, 1 tbsp chilli powder, 2 tbsp dhania powder
  • 1 tbsp each ginger garlic paste
  • 1 tbsp chilli powder
  • 2 tbsp dhania powder
  • 1 tsp haldi
  • 2 tbsp milk powder
  • For gravy
  • 1/4 cup clarified butter/Ghee
  • 1 tsp shahi jeera
  • 4 nos Laung
  • 6 nos black pepper
  • 1 black elaichi
  • 3 nos green elaichi
  • salt
  • Handful Kasuri methi
  • Green corriander and fried green chilli for garnishing

How to make Chicken cooked in Clarified Butter

  1. Mix all the ingredients mentioned in the marination section in a blender to make a puree, do no add water, pour the mixture in a bowl and marinate the chicken for 1 hour, best to do over night.
  2. Now take a wok and add ghee, when ghee is hot, add in whole garam masala (jeera, laung, black pepper, black elaichi and green elaichi) saute on high flame for a min.
  3. Now add the chicken along with the marinade and saute it on high flame till chicken turns opaque.
  4. Lower the flame to medium low cover and cook for 45 mins, you can add little water at intervals so the masala does not stick at the bottom.
  5. Keep stirring in between. Now in the end add a handful of crushed kasuri methi. Stir and let it cook for 5 more mins.
  6. Remove garnish it with coriander and chilli and serve hot with naan, roti or rice
