Mixed vegetable with fries

Ingredients to make Mixed vegetable with fries

  • Lentils: 1 cup
  • Kidney beans: 1 cup
  • Garlic cloves: 2 minced
  • Celery Stalks: 2 diced
  • Carrots: 2 shredded
  • Onion: 1 large finely chopped
  • Tomato puree: 1/2 cup
  • Green bell pepper: 1 diced
  • Cumin powder: 2 tsp
  • Turmeric: 1 tsp
  • Red chilli powder: 2 tsp
  • Garam masala: 2 tsp
  • coriander- handful chopped
  • oil
  • Salt to taste
  • Water as needed

How to make Mixed vegetable with fries

  1. In a pressure cooker boil lentils and kidney beans till soft.
  2. In a large pot over medium heat, add oil, garlic clove, carrots, celery, onion and bell pepper. Sautee for 10 mins till tender.
  3. Add tomato puree. Season with cumin powder, turmeric, red chilli powder, garam masala.
  4. Add boiled lentils and kidney beans.
  5. Add 2 cup of water. Bring the mixture to a boil. Simmer for 20 min, stirring occasionally. Cook until liquid is reduced.
  6. Add salt to taste. Garnish with coriander.

Serve on a bed of French fries.
