Ingredients to make Tub Tim Grob (Red rubies thai dessert)

  • 12 water chestnuts peeled and cubed
  • 3/4 cup of tapioca flour
  • 3-4 tbsp strawberry crush
  • coconut milk 1 cup
  • To make the sugar syrup:
  • 1 cup sugar
  • 1 cup water
  • A pinch of salt
  • A pinch of red food colour

How to make Tub Tim Grob (Red rubies thai dessert)

  1. Peel and chop water chestnuts into cubes.
  2. Soak it in strawberry crush and red food colour for around 10 minutes.
  3. As in thailand they use a particular syrup (red sala flavour syrup) which is tangy in taste. I have substituted it with strawberries crush.
  4. Drain it from the syrup and coat well with tapioca flour.
  5. Coat it well so that it will not leak the colour afterwards.
  6. After 10 minutes put them in a colander and dust off all the flour.
  7. Put a deep vessel filled with water on the stove.
  8. Let it come to a rolling boil. Once it starts to boil drop a coated chestnuts in water.
  9. After 3-4 minutes chestnuts should start to float above the water. Keep a bowl filled with ice cold water ready.
  10. Drain chestnuts and put it in ice cold water.
  11. In a separate pan put 1 cup water and 1 cup sugar.
  12. Let it boil till sugar dissolves properly. Keep stirring the syrup.
  13. Turn off the flame and add the coconut milk into it.
  14. If the heat is high the chances of coconut milk getting separate are high.
  15. Turn on the stove and keep the flame on sim.
  16. Keep stirring it constantly so the syrup and coconut milk gets incorporated nicely.
  17. It will start to thicken, stir for a few more minutes. Remove from the stove.
  18. Keep it aside to cool.
  19. Pour into glasses and keep it in the fridge to chill for some time.
  20. While you serve this dessert add ruby red water chestnut cubes to it.

My Tip:

If you like to have it warm you can or otherwise chill it.
