ABOUT Vegetable rice RECIPE

Aromatic basmati rice cooked with vegetables and spices.

Ingredients Serving: 4

  1. Rice 2 cups
  2. Water 4 cups
  3. Carrot chopped 1 cup
  4. Beans chopped 1/2 cup
  5. Peas 1 cup
  6. Onions chopped 1/2 cup
  7. Coriander leaves chopped 3 tbsp
  8. Ginger chopped 2 tbsp
  9. Cumin seeds 1 tbsp
  10. Ghee 3 tbsp
  11. Cinnamon 1"
  12. Cloves 3-4
  13. Black cardamoms 3
  14. Bay leaves 3
  15. Black pepper 6-7
  16. Green chillies 1-2, chopped
  17. Salt to taste

Instructions

  1. Heat ghee, add in the cumin seeds, bay leaves, cinnamon,cardamon and pepper.
  2. Add the ginger, green chilli, onion and saute till it's translucent in colour. Now add the vegetables and saute till it's done.
  3. Then add the washed rice, water, salt and cover with a lid.
  4. Bring it to boil, then reduce the heat to low and add the coriander leaves.
  5. Cook it till the rice absorbs the water completely.
  6. Serve it warm.
