ABOUT Sabudana Vada RECIPE

A Sabudana preparation that is loaded with chunky peanuts which is usually prepared during a fast. It is a favourite dish of my grand daughter's.

Ingredients Serving: 5

  1. Soaked Sabudana- 1 cup
  2. Boiled, peeled and finely chopped potatoes- 1/2 cup
  3. Roasted and coarsely crushed peanuts- 1/2 cup
  4. Chopped green chillies- 1 tsp
  5. Lemon juice- 1 tsp
  6. Sugar- 2 tsp
  7. Finely chopped coriander leaves 1/4 cup
  8. Salt to taste
  9. Oil to deep fry

Instructions

  1. Soak the sabudana and wash it well. Note to remove all the extra water.
  2. Cover and keep it for 2-4 hours till they swell up and become soft.
  3. Roast the peanuts in a pan over a slow fire till they change their colour. (It can be done in the microwave as well). Then allow it to cool.
  4. Remove the peel by rubbing them with your hands. Grind them very coarsely.
  5. Boil the potatoes, then peel and chop them into pieces.
  6. To prepare the vadas, mix together the soaked sabudana, mashed potatoes, coarsely grounded peanuts, green chilli, salt, cumin, coriander leaves, lemon juice, sugar and salt.
  7. Make 10 to 12 balls, then flatten them to make the patties or vada.
  8. Heat oil in a kadhai.
  9. Deep fry these vadas in hot oil on a medium flame till they turn golden from both the sides. Then drain them on an absorbent paper.
  10. Serve them hot with coriander chutney or tomato sauce.
