ABOUT Rajasthani Kadhi RECIPE

Rajasthani kadhi is mainly prepared with sour curd or buttermilk mixed with chickpea flour and other dry spices. it is generally served with white rice or jeera rice.

Ingredients Serving: 4

  1. For Kadhi we need
  2. 1 cup sour curd
  3. 1/4cup besan
  4. 1/2tsp haldi
  5. 1/2tsp red chilli powder
  6. 3 cup water
  7. Salt as per taste
  8. For tempering we need
  9. 2 tbsp ghee/oil
  10. 1 tsp mustard seeds
  11. 1/2 tsp jeera
  12. 1/4tsp methi seeds
  13. Pinch of hing
  14. Curry leaves
  15. 2 dry red chillies
  16. 1/4 tsp turmeric powder
  17. 1/4 tsp red chilli powder

Instructions

  1. firstly, in a large mixing bowl take 1 cup sour curd and ¼ cup besan
  2. add ½ tsp turmeric and ½ tsp chilli powder
  3. whisk smooth make sure there are no lumps.
  4. add 3 cup water and whisk well.
  5. Pour the besan mixture in a large kadai Or earthen pot and keep stiring until the mixture comes to boil keeping flame low. Else curd might curdle.
  6. Once the kadhi comes to boil add salt and mix well
  7. Continue to boil for 10-15 mins on medium flame stiring occasionally. If the consistency is thick adjust by adding water.
  8. Prepare the tempering by heating the ghee in a pan, add mustard seeds, jeera, fenugreek seeds, hing, curry leaves, dry red chillies, turmeric powder, red chilli powder. Stir till the tempering splutters
  9. Now pour the tempering over the kadhi.
  10. Add chopped coriander.
  11. Serve rajasthani kadhi hot with steamed rice or roti.
