Ingredients Serving: 3

  1. Cooked Rice- 3- cups
  2. Onion- 1- chopped
  3. Tomato puree- 1/2- cup
  4. Green chilli- 2- chopped
  5. Whole Cashew nut- 1- tbsp
  6. Red chilli powder- 1- tsp
  7. Garam masala powder- 1/2- tsp
  8. Oil- 3- tbsp
  9. Mustard seeds- 1- tbsp
  10. Coriander- 5- sprigs
  11. Moong dal (optional)- 1- tsp
  12. Salt - 1- tbsp

Instructions

  1. Take the cooked rice and divide into 3 parts. Make sure the rice is cooked in such a way that each grain is separate.
  2. Heat 1 tbsp oil in kadhai.
  3. Once oil is heated, add 1 tsp mustard seeds and let it pop. further add 1 tsp moong dal.
  4. when moong dal is slightly golden, Add one part of rice and pinch of salt to it and mix well.
  5. once mixed well remove from heat and keep aside.
  6. Repeat step 2 by adding 1 tbsp oil and followed by 1 tsp mustard seeds. wait till it pops.
  7. Add chopped onions and mix well till golden.
  8. Add tomato puree and give a good mix. I have used 2 small tomatoes for puree.
  9. add red chilli powder, garam masala and pinch of salt. mix well till oil releases from sides.
  10. once mixed well add 2nd part of cooked rice.
  11. mix till the whole mixture gets combined well and releases aroma.
  12. once done remove from heat and keep aside.
  13. grind Coriander, Cashew and green chilli into a smooth paste. Add water as required for grinding. make sure paste is not watery.
  14. you can add the chilli as per your requirement. once done keep aside.
  15. repeat step 2 followed by adding the paste. make sure to switch to low flame while doing this step or the paste would burn and stick to pan.
  16. once raw smell of the paste goes , add last part of rice and mix well.
  17. once done remove from heat and keep aside.
  18. here we have our three different rices. you can plate them as per your choice.
