Carrot Poriyal/ Carrot Stir Fry

Ingredients to make Carrot Poriyal/ Carrot Stir Fry

  • carrot, finely diced- 4 nos
  • oil - 3 tbsp
  • mustard seeds - 1 tsp
  • urad dal- 1 tsp
  • 2 dry red chillies, broken into pieces
  • Few curry leaves
  • onion, chopped - 1 medium sized
  • green chillies, slit- 4 nos
  • coconut, grated- 1/2 cup
  • salt to taste

How to make Carrot Poriyal/ Carrot Stir Fry

  1. Heat oil in a pan. Add in the mustard seeds and urad dal, then let it splutter.
  2. Next add the curry leaves, dry red chillies and green chillies. Then add the chopped onion and saute for five minutes, next add carrots and mix it well.
  3. Now lower the flame and cover with a lid. Let it cook for 5-8 minutes.
  4. Serve it warm.

My Tip:

Use coconut oil to prepare this dish.
