Qubaani Ka Meetha (Dry Apricot Relish)

Ingredients to make Qubaani Ka Meetha (Dry Apricot Relish)

  • Dry apricots 1 kg (soaked in enough water overnight or atleast 8-10 hours)
  • sugar 1 cup
  • lemon juice of 1 small lemon
  • Fresh cream to serve
  • 1/2 cup of small almonds that you get from breaking the seeds (add them into the dessert and reserve some to garnish.)

How to make Qubaani Ka Meetha (Dry Apricot Relish)

  1. Cook the soaked apricots on a low to medium flame until they are soft. Then let them cool.
  2. Next, using a strainer, either strain the pulp separating the seeds or just remove the seeds with your hands and leave the whole apricots as they are. (This can be made by nicely by squeezing the apricots and reducing them to a soft pulp.)
  3. Add the sugar and the lemon juice. Cook this further until it reduces to the desired consistency.
  4. Serve it cold with lots of cream.

My Tip:

Lemon juice gives it a refreshing and tangy flavour. Use a strainer or a sieve to separate the pulp and the seeds.
