Punjabi Baigan Bharta

Ingredients to make Punjabi Baigan Bharta

  • 250 grams fresh and light Brinjal (ask for bharta baigan, the lighter the better)
  • 2 medium sized onions
  • 2 medium sized tomatoes
  • 1/2 cup green peas
  • 1 green chilli
  • A bunch of coriander/ cilantro
  • salt to taste
  • 1 tsp red chilli powder as per choice
  • 1 tsp cumin powder
  • 1 tbsp ghee/ oil as preferred

How to make Punjabi Baigan Bharta

  1. Roast the brinjal on the stove for 10 minutes while turning sides in between.
  2. Next, chop the onions finely along with the tomatoes.
  3. Let the roasted brinjal cool down, then clean the seeds and remove some while cleaning it under running water.
  4. Take a non-stick pan or kadai, heat the oil or ghee and add the onions. Let it change colour and add the tomatoes to stir fry.
  5. Next, add salt and green peas. Then cover and cook for 5 mins till it is tender. Now add the cumin powder, green chillies, slit in two, red chilli powder. Stir it well for 2 mins.
  6. Mash the roasted brinjal well and add it to the onion tomato-pea mixture. Mix well and cover it for a minute on a low flame.
  7. Serve it with a garnish of coriander on top.

My Tip:

You also garnish it with crumbled paneer. Buy fresh brinjals that contains more pulp than seeds.
