Chicken Afghani

Ingredients to make Chicken Afghani

  • 1 1/2 kg chicken (Fresh) about 12-14 pieces curry cut
  • 1/2 kg yoghurt/ Curd
  • 1/2 kg onions
  • 3-4 tbsp ginger garlic paste
  • 150 grams cashews (Unsalted)
  • 20 grams khuskhus or poppy seeds
  • 100 grams blanched almonds
  • 3-4 green chillies as per taste
  • 1-2 piece cinnamon sticks
  • 4-5 star anise
  • 3-4 bay leaves
  • salt to taste
  • 1-2 tsp white pepper
  • 1 1/2 tsp garam masala powder
  • 1 cup refined oil of choice

How to make Chicken Afghani

  1. Wash and clean chicken pieces well.
  2. To the chicken apply the yoghurt, white pepper, salt, ginger garlic paste and keep aside.
  3. Grind to paste onions and green chillies. Keep aside.
  4. Now make a paste of the cashews, khuskhus (poppy seeds) and almonds with some water added and keep aside.
  5. Heat oil in a deep pot, add bay leaves, star anise and whole cinnamon 1 piece.
  6. On a low flame, add the onion paste and stir till it is translucent.
  7. Add in the cashew poppy seed and almond paste.
  8. Stir well for 5-10 minutes well on a low flame. As its simmering, add the marinade chicken and stir mix well.
  9. Check your gravy or curry as per requirement and add water to let the chicken cook well.
  10. Cook covered on a low flame till the chicken is done and the curry is snowy, not very thick or very thin.
  11. Sprinkle garam masala and simmer for 5 minutes.
  12. Serve hot.

My Tip:

If curry goes thin, add cream and cornflour beat well.
