Ingredients: 1 cup or 125 grams all purpose flour; 3/4 tsp baking powder; 1/4 tsp baking soda; Pinch of salt; 125 grams or 1/2 cup yoghurt; 1 egg; 40 ml or 3 tbsp vegetable oil; 80 grams or 6 1/2 tbsp sugar; 1/2 tsp vanilla; 1/2 tbsp water

Adapted from chocolateandzucchini.com , this is a LOvely light fluffy vanilla cake which takes only about half hour from start to finish!

Ingredients Serving: 12

1 cup or 125 grams all purpose flour
3/4 tsp baking powder
1/4 tsp baking soda
Pinch of salt
125 grams or 1/2 cup yoghurt
1 egg
40 ml or 3 tbsp vegetable oil
80 grams or 6 1/2 tbsp sugar
1/2 tsp vanilla
1/2 tbsp water

Instructions

Preheat oven to 180 C . grease and flour a 8 inch round pan. Line the bottom with parchment
Sift together dry ingredients, ie flour, baking soda, baking powder and salt
Mix together wet ingredients ie water, vanilla , yoghurt , egg and oil with sugar
Fold in dry mixture into the wet mixture
Pour into prepared pan and bake 28 to 32 minutes or until toothpick inserted comes out dry
Cool in pan for 10 minutes and then invert and cool on rack completely. Dust with icing sugar and serve !
