Ingredients to make Carrot Beetroot Salad

  • Fresh carrot
  • 2 no’s finely chopped/minced
  • Beetroot – 1 small finely chopped
  • onion – 1 medium finely chopped
  • coconut – 1/2 cup grated/shredded
  • Roasted peanut – 3 tbsp
  • Chili powder or green chilly paste – 1/2 tsp (adjust to your taste)
  • cumin powder – 1/2 tsp
  • Vegetable oil – 1 tbsp or 1 1/2 tbsp
  • salt to taste
  • Fresh lemon juice – 1 tsp
  • coriander – small bunch chopped for garnishing

How to make Carrot Beetroot Salad

  1. Chop all vegetables as fine as possible, or chop it in a food processor and keep ready.
  2. Add the vegetables in a bowl, add all spice powder and salt to taste, toss it well.
  3. Add in the vegetable oil and toss again, finally add roasted peanuts, toss it well.
  4. Garnish with fresh lemon juice and chopped coriander.
  5. Healthy and nutritious vegetable salad is ready to enjoy, any time of the day.

My Tip:

Adding grated coconut roasted peanut to vegetables makes the salad tasty and healthy.
