ABOUT Baked Coconut Chicken Tenders RECIPE

Ingredients Serving: 6

  1. 500 gms chicken breast(cut into thin strips)
  2. For marinade:
  3. Coconut Milk 1 Cup
  4. 1 tbspn lemon zest
  5. Chilli flakes
  6. Salt
  7. For coating:
  8. 3 eggs
  9. Salt and pepper
  10. 2 cups rice flour
  11. 2 cups unsweetened shredded coconut
  12. Chilli flakes
  13. Salt

Instructions

  1. Wash and clean the chicken well
  2. Mix all the ingredients under marination and put the chicken pieces in it keep aside for 2 hours.
  3. While the chicken is marinating whisk eggs, salt and pepper. Then mix rice flour, shredded coconut, chilli flakes and salt.
  4. Now line baking tray with greased parchment paper.
  5. Dip the marinated chicken pieces in the egg bath then coat in the flour and coconut mix and arrange them on the baking tray.
  6. Bake the dish for 180°c for 20-25 minutes or untill golden brown.
