Khaman Dhokla...

Ingredients to make Khaman Dhokla...

  • gram flour 2 cups
  • curd 1/2 cup
  • turmeric 1/2 tsp
  • salt to taste
  • Grated ginger a tsp
  • green chillies finely chopped 3
  • asafoetida a pinch
  • Citric acid 1/4 th tsp or lemon juice 1 tbsp
  • oil 2 tbsp
  • Eno fruit sachet 1
  • For the topping: Grated coconut as required.
  • Fresh coriander chopped as required
  • For the tempering: mustard seeds 1 tsp
  • Dry red chillies or green chillies, slit 4
  • curry leaves a few

How to make Khaman Dhokla...

  1. Make a thick batter using all the ingredients except the tempering and topping ones.
  2. Grease the plates of the dhokla maker.
  3. Just before steaming, add the eno and mix lightly.
  4. Pour in the plates and steam on high for 15 minutes.
  5. Check with a fork to see if it is done.
  6. After cooling down a bit, cut them into desired shapes.
  7. Top it up with the tempering and garnish with lots of grated coconut and chopped coriander leaves.
  8. Serve hot with chutney of your choice.

My Tip:

You can even use buttermilk. Citric acid gives perfect spongy dhoklas.
