How to make Sweet Corn Chocolate Tart (No Bake)

  1. Prepare ganache by heating the cream in a thick bottomed pan until the bubbles appear on the pan sides.
  2. Do not boil the cream.
  3. Pour this hot cream over finely chopped chocolate and let it sit for a minute.
  4. Now mix it well making sure there are no lumps.
  5. Keep it aside to cool at room temperature.
  6. Line a 4*4 inch pan with parchment or foil paper keeping extra hanging on the sides.
  7. Crush the biscuits finely in a mixer, then add in 2 tablespoons melted butter and blend well.
  8. Set the base of the tin with this mixture covering the base and sides and leave it the fridge to set for an hour.
  9. In a non stick pan, heat remaining butter.
  10. Add in the boiled corn kernels and sauté for a minute.
  11. Now add in honey and cook again for a minute.
  12. Finally pour in the fresh cream and cook for 5 minutes stirring frequently to avoid sticking.
  13. Switch off the flame and let it cool.
  14. Put this cooled mixture on the prepared base and spread evenly.
  15. Now spread a tablespoon of whipped cream on this mixture (this step is optional).
  16. Pour 3/4 quantity of ganache over this and put it back in fridge to set.
  17. Pipe some remaining ganache and corn kernels as desired.

My Tip:

This recipe doesn't include the idle/inactive time to freeze the dessert. This dessert is surprisingly delicious and the crunch of corn kernels takes it to another level. Add salt in corn mixture at last if you like the tart sweet and salty.
