Palak Pasta

Ingredients to make Palak Pasta

  • Penne pasta - 200 gm
  • spinach - 1 medium sized bunch
  • Milk - 500 ml
  • maida - approx 2 to 3 tbsp
  • Sweet corn kernels - 200 gm
  • Baby corn - 100 gm
  • garlic - 5 to 6 cloves (finely chopped)
  • Cheese - as per your liking
  • butter - 1 tbsp
  • salt - As required
  • Oregano for seasoning
  • chilli flakes for seasoning

How to make Palak Pasta

  1. Make the white sauce. For that, boil milk, add a paste of maida and water to it with continuous stirring. Cook till it is thick.
  2. Wash and chop spinach roughly. Saute it in very little oil till it is soft. Let it cool and then grind it in the mixer to make a puree.
  3. Cut baby corns into rounds. Boil them along with sweet corn kernels with little salt.
  4. Boil the pasta with little salt and oil. Do not overcook it.
  5. In a pan, heat butter and saute chopped garlic for a minute.
  6. Then add the spinach puree. Saute it for 2 to 3 minutes.
  7. Add the white sauce and stir till it mixes completely. Saute it for 5 minutes.
  8. Then add the boiled baby corn and the corn kernels and cheese. Cook for a minute.
  9. Then add boiled pasta, oregano, chilli flakes, salt and mix well. Add some grated cheese on the top, cover with the lid and keep it for 2 minutes till the cheese melts.
  10. Remove the lid and serve hot.

My Tip:

If cheese is added before adding the pasta, it melts evenly.
