Poached egg salad

Ingredients to make Poached egg salad

  • eggs 2
  • vinegar 1/2 cup
  • Yellow bell pepper 1
  • Red bell pepper 1
  • onion 1
  • cucumber 1
  • tomato 1
  • Black pepper 1 teaspoon
  • mustard sauce 1 tablespoon
  • olive oil 1 tablespoon
  • lemon juice 1 tablespoon
  • Spring onion 1 tablespoon, chopped
  • Fresh coriander leaves for garnishing
  • salt to taste

How to make Poached egg salad

  1. For the dressing: Add 1/4 cup of chopped bell peppers, cucumber, lemon juice, mustard sauce and black pepper in a mixer.
  2. Make a smooth paste of it.
  3. Add chopped spring onions to the dressing.
  4. To make the poach: Take a deep neck vessel and add 2 to 3 cup of water in it .
  5. Add vinegar and salt to it boil .
  6. As soon as the water start to boil, put gas in low and gently break the egg on it or you can break the egg in a bowl and gently drop into the water.
  7. Once its properly cooked, take it out carefully with the help of a spoon .
  8. Cook the second egg the same way.
  9. Cut the red bell pepper, yellow bell pepper and cucumber into long strips .
  10. Cut onion and tomato into squares or you can cut it into your desired shapes .
  11. Mixed the chopped vegetables with the dressing.
  12. Drizzle some olive oil and black pepper on it.
  13. Arrange the chopped vegetables as per your desire.
  14. Thread the chopped onions and tomatoes on toothpicks.
  15. Spread the poached eggs on the salad.
  16. Drizzle some dressing, salt and black pepper on the poached egg.
  17. Put a coriander leaf on it and serve it .
