Dimer Dalna - A Bong Egg Curry

Ingredients to make Dimer Dalna - A Bong Egg Curry

  • Boiled eggs - 4
  • ginger - Garlic paste - 1 tbsp
  • tomato - 1 (Pureed)
  • onion - 2 (1 grated & 1 chopped, deep fry till it's brown)
  • cumin powder - 1 tsp
  • Garam masala powder - 1/2 tsp
  • coriander powder - 1 tsp
  • ghee - 1/2 tsp
  • Chili powder - 1 tsp
  • turmeric powder - 1/2 tsp
  • Whole cloves - 2 (crushed)
  • cinnamon - 1/2 inch piece (crushed)
  • Green cardamom - 2 (crushed)
  • Coriander Leaves and onion rings to garnish

How to make Dimer Dalna - A Bong Egg Curry

  1. Sprinkle salt and turmeric on the boiled eggs and fry in 1 tsp oil till they are light golden. In the same pan, add 2 more tbsp oil and add the chopped onions, fry till they turn golden and keep it aside.
  2. In the same pan, add 1 tsp of oil and add the crushed whole spices. Turn off the heat and let the spices infuse in the oil. Now again turn on the heat and add the grated onions, fry till the oil separates from the onion.
  3. Add ginger - garlic paste and cook till the raw smell disappears. Add tomato puree and cook for 3 mins on a medium heat. Make a paste of the cumin, coriander, salt, turmeric and red chilli powder with 1 tsp of water and add it same in the pan.
  4. Cook the masala for another 5 mins till the oil separates and then add 1/2 cup water, the eggs and the deep fried onions. Simmer for 10 mins. Finish it off with garam masala powder and the ghee or clarified butter.
  5. Garnish with chopped coriander leaves and onion rings. Serve with hot rice or hot chapati.

My Tip:

My Tip: Fried onion is my touch to the traditional Dimer Dalna as it adds to the richness of the gravy, you can omit if you want to.
