Healthy Breakfast Egg Salad

Ingredients to make Healthy Breakfast Egg Salad

  • 4 - egg hard boiled
  • 4- cabbage leaves
  • 1/4 Cup - spring onion, chopped
  • -1/4 Cup - Celery leaves
  • 2 tbsp- coriander leaves
  • 1 - Green chilli
  • 2 medium - Boiled potatoes
  • For dressing : 1 tbsp - Sweet tamarind paste
  • 3 tbsp - tomato sauce
  • 1 tsp - Chili powder
  • 1/4 tsp - Black pepper powder
  • 1/2 tsp - Chat masala (for Indian twist)

How to make Healthy Breakfast Egg Salad

  1. Boil the potatoes and the eggs separately. Peel and keep aside.
  2. Heat 1 tbsp olive oil in a frying pan and fry the potatoes till crisp and golden in colour. Remove the pan from heat and remove the potatoes in a serving plate. Add cabbage leaves, celery leaves, spring onion, coriander and mix the olive oil in it so that everything is well coated. .
  3. For dressing : Whisk all the ingredients of the dressing in a small bowl. Keep aside 1 tbsp dressing for the eggs. Pour the rest of the dressing over the veggies in the plate and mix well. Transfer to a serving plate and keep aside. Arrange the egg on the salad and put a drop of dressing on each piece of the egg.
  4. Serve while still hot.

My Tip:

Drizzle a little olive oil on top of the salad. It will enhance the taste.
