How to make Besan, Atta & Rawa Ladoo

  1. Pulse the sugar in mixer twice to get coarsely grounded sugar.
  2. Powder illaichi & keep aside.
  3. Pulse the almonds twice or thrice to get the coarsely grounded almonds.
  4. Dry roast the besan in a big heavy bottomed kadai for some time stirring continuously. This will reduce your major hard work.
  5. Meanwhile melt ghee in another pan.
  6. After 8-10 mins add melted ghee to besan and keep stirring for 2-3 minutes.
  7. Add atta. Mix well.
  8. Add suji. Mix well and roast till you get strong aroma of besan and mixture turns to medium dark brown in color.
  9. Sprinkle 2tbsp of water on this mixture. This will give a granular texture to the mixture.
  10. Let the flour cool down for some time.
  11. Add powdered sugar. Mix well.
  12. Add almonds and illaichi powder. Mix well
  13. If mixture is dry, add little more ghee and check if the mixture can hold shape.
  14. Make ballsladoos when mixture is warm. Store them in the air tight container.

My Tip:

If the mixture has so much of ghee and unable to hold its shape. Keep it in a freezer for 15-20 minutes and make balls again. It would be easy to make balls after freezing.
