Cauliflower and Red quinoa salad

Ingredients to make Cauliflower and Red quinoa salad

  • 1 cup red quinoa grain
  • 1 cup chopped cauliflower into very small florets
  • I large cucumber chopped into small pieces
  • I chopped tomato
  • 1/4 cup finely chopped scallions
  • 1/2 cup red onions
  • 1 1/2 tbspns olive oil ( EVOO is better )
  • Juice of 2 small limes
  • Salt to taste
  • freshly ground black pepper
  • 4-5 stalks along with cilantro leaves finely chopped

How to make Cauliflower and Red quinoa salad

  1. Important : Wash the quinoa grain before cooking
  2. To cook quinoa, bring 2 1/2 cups water to a rolling boil and add the quinoa grain.
  3. Simmer uncovered for 12-15 minutes until water is absorbed. Fluff it up with a fork and set aside to cool.
  4. Prepare the salad by combining the cauliflower, cucumber, tomatoes , scallions and onions in a large bowl.
  5. Add the cooled quinoa to the salad.
  6. In a separate small bowl mix the olive oil , lime juice and a dash of salt.
  7. Drizzle the dressing over quinoa salad and toss gently.
  8. Garnish with cilantro and top off with black pepper.
My Tip: This salad makes an excellent side dish with any fish / meat entree and need not be limited to first course only...enjoy with Hummus too.
