Badamgir

Ingredients to make Badamgir

  • almonds - 1 cup
  • Milk - 1 litre
  • Condensed milk - 300 gm (3/4th of a standard tin)
  • saffron - a few strands
  • Water to soak the almonds

How to make Badamgir

  1. Soak the almonds in hot water for about 30 mins so that the skin can be peeled off. Keep some aside to garnish.
  2. Soak the saffron in a spoonful of cold milk.
  3. Heat the rest of the milk in a heavy bottomed vessel.
  4. While the milk is heating, make a fine paste of the soaked almonds with some water.
  5. Once the milk comes to a boil, add the almond paste and let it simmer for about 10 mins while continuously stirring it.
  6. After 10 mins add the condensed milk and stir well. Simmer on a low flame for about another 10 mins.
  7. Cut the saved almonds into halves and garnish.
  8. Serve hot or cold depending on the weather and your preference.

My Tip:

Remember to stir the milk continuously after adding the almond paste, else it may stick to the bottom and get burnt.
