Khaman Dhokla Recipe (Instant)

Ingredients to make Khaman Dhokla Recipe (Instant)

  • 1 and 1\2 cup gram flour or besan
  • 2 tbsp semolina (suji)
  • 2 tsp sugar
  • 1 tbsp oil
  • 1 tsp green chilli paste
  • 1 tsp salt
  • 1 tsp ginger
  • 1\4 tsp haldi/ turmeric powder
  • 1 and 1\4 tsp eno fruit salt
  • 1\4 tsp cooking soda
  • 2 tsp lemon juice
  • 1 and 1\4 cup water
  • For tempering:
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 2-3 green chillies, slit
  • 1 tbsp lemon juice
  • 3\4 cup water
  • 3 tsp sugar
  • Chopped coriander to garnish

How to make Khaman Dhokla Recipe (Instant)

  1. Sift the besan/ gram flour.
  2. Mix the besan(gram flour), suji, salt, sugar, haldi/turmeric, ginger-green chilli paste, oil and make a smooth batter of thin pouring consistency.
  3. Add soda and eno fruit salt. Mix it well. Do not over beat this. Immediately transfer the batter to a steamer/ steaming pan cover with a lid and cook it for 20 mins.
  4. If cooking in a pressure cooker, do not put any weight/whistle. You are only steaming it. Steam until the fork comes out clean.
  5. To temper, heat oil in a pan, add in the mustard seeds, slit green chillies, sugar and lemon juice and also add water. Let it come to a boil. Turn off the flame and add this to the dhokla.
  6. Let the dhokla rest for 10-20 mins until it absorbs all the water and becomes soft and fluffy.
  7. Serve it hot with a garnish of chopped coriander on top.

My Tip:

You can add sesame seeds if you wish. You can also add freshly grated coconut while serving it.
